When I first made this recipe, I made a note that it was so quick and easy. Then I saw the note where I said, of course it was, DH did all the peeling and dicing. lol Oh, and there was also a note that it was DELICIOUS!!!

Rotini Salad with Oriental Vegetable Sauce

12 oz. Rotini
SAUCE:
1 cup diced cucumber/or zucchini
1 cup diced carrots
1 cup diced sweet red peppers
1/3 cup chopped green onions
1/4 cup chopped cilantro or parslely
3 TB. vegetable oil
2 tsp. sesame oil
3 TB. rice wine vinegar
1/4 cup chicken stock
1 TB. soy sauce
2 tsp. minced ginger
2 tsp. crushed garlic

Cook pasta in boiling water until firm to the bite. Rinse with cold water. Drain and place in serving bowl.

Make the sauce: In food processor, add rest of ingredients. Process on and off for 30 seconds until finely diced. Pour over pasta and toss. Chill.

Looking at this again, I've just realised that the vegetables aren't cooked but processed from raw to form a sauce. Very 'healthy'! I'm curious about how it would look/taste. I don't have a food processor so I can't really try it out though.
 
Could you maybe grate them very fine or use a garlic press?
