Seitan loaf

Beat the seitan into small crumbs. Mix everything, cover with foil and bake in the oven (200˚C) for about an hour or until the liquid has reduced. Serve with fresh pickled cucumber salad (cucumber, dill, maple syrup and lemon juice) and mashed potatoes.

Ingredients:
- 5-6 dl readymade seitan (wheat gluten strips or pieces)
- a bunch of parsley, chopped
- 4 cloves of garlic, chopped
- 1 teaspoon of dried rosemary
- 7-10 drops of Tabasco or a little bit of chili or cayenne pepper
- 0,5 teaspoons of ground black pepper and allspice mix
- 0,5 teaspoons of cumin (jeera)
- 1 tablespoon of powdered, dried mushrooms
- 10-12 pickled capers
- 4 dl of vegetable sour cream + 1 dl of water (or 5dl of vegetable milk)
- 1 tablespoon of soy sauce
- 1 tablespoon of lime juice
- 1-2 tablespoons of maple syrup
- 1-2 teaspoons of (low-natrium) salt; depending on whether the Seitan is heavily salted or not
