Recipe Seitan loaf

Seitan loaf

Preparation time: +1 hour
Serves 4

Ingredients:

  • 5-6 dl readymade seitan (wheat gluten strips or pieces)
  • a bunch of parsley, chopped
  • 4 cloves of garlic, chopped
  • 1 teaspoon of dried rosemary
  • 7-10 drops of Tabasco or a little bit of chili or cayenne pepper
  • 0,5 teaspoons of ground black pepper and allspice mix
  • 0,5 teaspoons of cumin (jeera)
  • 1 tablespoon of powdered, dried mushrooms
  • 10-12 pickled capers
  • 4 dl of vegetable sour cream + 1 dl of water (or 5dl of vegetable milk)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of lime juice
  • 1-2 tablespoons of maple syrup
  • 1-2 teaspoons of (low-natrium) salt; depending on whether the Seitan is heavily salted or not

Work steps:

Beat the seitan into small crumbs. Mix everything, cover with foil and bake in the oven (200˚C) for about an hour or until the liquid has reduced. Serve with fresh pickled cucumber salad (cucumber, dill, maple syrup and lemon juice) and mashed potatoes.
 
This sounds very interesting. For some reason, despite the rising tide of veganism and availibility of vegan foodstuff in supermarkets, seitan is difficult to obtain here. I have made it from scratch in the past but found it a chore. Is seitan easily available in Finland?
 
Yes, kebab style seitan by the trade name "Vöner" is easily available. It was developed by a Helsinki based pizza restaurateur called Siva Parlar and became an instant hit in 2017. It is sold in national retail chains and imported to neighbouring countries. There are e.g. Estonian seitan varieties available, too.
