Recipe Seven-up Cake.

So good and so fast! I'm going to try this later today. I have a feeling we've got a new family favourite emerging
 
Wow Shermie, your cakes look great! Such a beautiful golden colour! I imagine that 7up would give a crisp lemon flavour to the cake - mmm! I was wondering what effect the bubbles would have on the cake mixture - do they give a lighter batter?
 
Actually, the 7up is added as the last ingredient. And it is slowly stirred in.

Pound cake is aways dense and kinda heavy. The cake itself rises on egg power alone, which is why no leavening agents are used at all.
Using a stand mixer that has a flat general-purpose beater helps give the cake batter it airiness & fluffiness, giving it its higher rising, than would be adheived by just using a ordinary 2-beater mixer. :wink:
