That batch went for 90 minutes. I got it up to a boil on the stovetop, then stuck it in the oven for the long simmer.
I do all my soups and stews that way as well. Also, any crockpot recipe, if I don't feel like dragging it out, I do the same way - in the dutch oven and into a slow oven with that.
