Smoker/Smoking foods

Smelts! I recall when I lived in Santa Cruz CA there was this time that there were lord only knows how many smelts swimming into the harbor, by the boatload. They were swimming up the river to lay eggs. I went down there with a net and bucket and brought pounds back to the house. The cats were happy and we were *done* eating baitfish...

Oh dear lord, my OH's family (the elders anyway) LOVE smelts. Ugh. They eat them bones and all. I tried them and not a fan. I ate a few to be polite. You're right, they belong on the end of a hook to catch bigger fish!
 
Italian family ... Christmas Eve ... Smelts bones and all. YUCK!! Enough said.

Yeah maybe, that or deviled eggs for Superbowl Sunday. I do have a nice buffalo mozz in the frig unopened. I unexpectedly had some nice work opportunitites pop up for tomorrow and Friday so it may be Saturday before I do anything with it.
I wonder if you smoke buffalo mozzarella in it’s liquid how that turns out 🤔
Bets it’s lovely, probably mild though having to travel through all the liquid first.
 
So went to my husband's cousin's house last night for dinner. I had a 13 pound turkey that I had bought back in November for .39 cents a pound that I wanted to smoke and he is pretty much an expert on smoking (at least in my world of people who reguarly smoke foods). We had decided a few weeks ago that we would get together with my youngest daughter and her husband, my husband (before he injured his knee and ankle and decided to stay home), and 2 friends of DH's cousin (with a few little kids running around) and cousin would handle it for me. He picked the turkey up Wednesday. My goodness but he did a splendid job! He spatchcocked the turkey, brined, and injected it. It was amazing--tender, moist, and flavorful. I brought some butterflied shrimp in a foil pan covered in a lemon-butter garlic sauce with Cajun seasoning and parmesan cheese that he smoked for about 45 minutes. That was outstanding as well (we had done that once before). I also brought mashed potatoes, fresh sourdough rolls, and macaroni and cheese (all from scratch), and somehow someone dropped the ball on a veggie or salad, but oh well. I came home with leftover turkey which is always a wonderful thing and am looking forward to a smoked turkey, bacon and avocado sandwich later on.

I had bought a small counter smoker a few months ago I have yet to use but am trying to resist taking on more work so I can play with it a little. I'd like to do some smoked cheese or something.

What's everyone else smoking these days? Foodwise, LOL?
