Simply mushrooms on toast - but adding spices to the mushrooms gives an unusual twist.

2 finely sliced shallots
Vegetable oil
125g shiitake mushrooms
A handful of Chanterelles
1 tsp garam masala
1 tsp ground cinnamon
1/2 tsp ground allspice
Parsley
Toasted sourdough bread

Method
- Finely chop the shallots and fry gently in oil until translucent.
- Add the mushrooms and ground spices and cook gently until the mushrooms are tender.
- Pile the mushrooms onto toasted sourdough and sprinkle with chopped parsley and the pan juices.
