Ciao a tutti,
Ray love his roast beef dinner. I happy make for him but I add my twist on English tradition with dry rub. I tend find plain roast beef is bland. I no use all of recipe on one beef roast, I make this an put inside glass jar with tight lid.
You need -
  • 1 1/2 Tablespoon onion powder.
  • 1 1/2 Tablespoon garlic powder.
  • 1 tablespoon ground ginger.
  • 1 Tablespoon dried thyme.
  • 1 teaspoon freshly ground white pepper.
  • ½ tablespoon cinnamon.
  • 1 tablespoon ground all spice.
  • 1 Tablespoon smoked paprika.
  • ½ Tablespoon ground nutmeg.
  • 2 -3 Tablespoon brown sugar

That looks interesting. I like to keep it simple for roast beef, Kosher salt and fresh ground black pepper. I like the beef to shine and the drippings to have a natural flavor.
 
I usually use salt, pepper, and a little garlic powder.

Roast beef Sunday lunch is definitely up there as a contender for my favorite meal. Our anniversary is next month, and since we won't be in Norway as planned, I'm going to make a Sunday lunch here (but on a Tuesday :laugh:.
