Sprucing up your holiday leftovers!

How do you plan to make over your leftovers from the holiday dinners? There are a wide variety of choices that you can think of to make ends meets with them for a few days. Which one is your favorite? :wink:
 
If I had taken some leftovers home with me (we did have the opportunity, but I didn't avail myself of it), I love a good turkey casserole. Combine a little of the white with a lot of the dark, deboned. Mix in stuffing/dressing, and mashed potatoes. If in the mood, top with a melty cheese- or not. Bake until hot all the way through.
 
We often make a chicken or turkey curry with the leftover meat the next day, because we usually crave something spicy after more traditional foods the day before. We use the cranberry sauce to make a nice dessert with custard and cake.

If there are veggies leftover they get made into a salad to use on bread, and mashed potatoes are used to top a dish like sheperd's pie somewhere later in the week.
