Recipe Sri Lankan Apple Curry

This Apple curry was inspired by a recipe fro The Flavour Blender. (I'm using frozen chilli/garlic as I cant get fresh at the moment.). I would prefer to use full fat coconut milk and a mix of fresh chillies and chilli powder)


2-3 apples cut into chunks. (crispy sour ones are best apparently, but I used three small dessert apples)
coconut oil oil
1 1/2 tsp black mustard seeds
1 chopped onion
2 bay leaves dried
1 cube frozen green chillies
1 tbsp THIS curry powder
1/4 tsp turmeric powder
1 cube frozen garlic
1/4 tsp salt
1/3 can low fat coconut milk
Salt

Heat oil
Cook onions, bay leaves, chilli and mustard seeds until the onions are softened.
Add the curry powder, turmeric and stir for a few seconds
Add the apples, frozen garlic and salt and stir to cover the apples with the spices.
Cook and stir the apples until they start to soften.
Add the coconut milk and cook until the apples are soft (but still holding shape)
