The state banquet at Windsor castle in honour of Trump's visit (for 160 people).

I find this menu very underwhelming. I know they have to play safe, but it seems uninspired to me. No mention of vegan options although I am sure they would be available.
  • Hampshire Watercress Panna Cotta with Parmesan Shortbread and Quail Egg Salad
  • Organic Norfolk Chicken Ballotine wrapped in courgettes, with a thyme and savoury infused jus
  • Vanilla Ice Cream Bombe with Kentish Raspberry Sorbet interior with lightly poached Victoria Plums
It took almost a week to construct the 50-metre table - which is the same length as 2.7 Marine One helicopters - and was laid with 1,452 pieces of cutlery and 139 candles.
 
I also thought it was terribly uninspired. A bit like the Coronation Quiche (remember that? No? Good!)
If you break it down to bare bones, what you've got is cream cheese & eggs, chicken with a veggie and ice cream with sauce.
A little surprised they used Parmesan for the shortbread, rather than aged Cheddar.
For a huge undertaking like this, there would never be any options mentioned. I'm sure if one of the guests were vegetarian, vegan, lactose-intolerant, etc., exceptions would be provided, especially in such a meticulously planned event.
Since the average American (according to google) consumes a massive 52kg of chicken per year, I suppose chicken was the safe choice.
The wine and spirits list, however, was incredible. a 1945 port and a 1912 cognac.

Yes. And nearly all of the menu can be made ahead.

Though I can’t quite imagine a watercress panna cotta going down well with a man who likes his steak well done with ketchup 😬
Mind you not sure I fancy watercress panna cotta either 😂

Well, some people are adventurous and like to try new things. Some are stunted and don't like to experiment with new things. I am with you on the watercress panna cotta, though, it really doesn't sound great. They should have just served the McD's value meals and not wasted money on good port and cognac. They could have taken a colored marker and written "45" and "47" on the diet coke cans and he would have thought that was special.
