Strawberries in Madeira and Cream
Makes 2 servings
Ingredients
2 cups fresh strawberries
1 cup Madeira (I used medium-dry)
Demerara or turbinado sugar, for sprinkling
Freshly whipped cream, or any acceptable substitute
Directions
Wash, top, and quarter the berries, then place in a small mixing bowl. Add the Madeira and stir throughly. Cover and refrigerate for two hours.
Sprinkle a good pinch of the sugar over the berry mixture and stir once more. Evenly divide the berries between two dessert bowls, top with whipped cream (or substitute), and add a final sprinkle of sugar. Serve.
Reserve the liquid from the soaked berries, refrigerate, and enjoy as a cordial.
