400gms sweet potato cut in to chunks
100gms ginger peeled and sliced
100gms palm sugar
1 pandan leaf
6 cups water
Bring water to a boil in a medium size saucepan. Add ginger, sugar, and pandan leaf. Simmer for 7-8 minutes with lid off saucepan. Add sweet potato, and simmer for another 20 minutes (lid off), or until potato is soft but not disintegrating. To serve, place a few sweet potato pieces in a bowl, and spoon over a generous amount of ginger syrup. Can be served hot or cold.
