The CookingBites recipe challenge: carrots

After a long think, and a good night's sleep (OK - that bit is a white lie, but who will ever know), I can anounce that winner is detroitdad with the Recipe - Roasted Carrot and Ginger Soup. I love carrots and soups, but it was a very close choice between that and Recipe - Japanese-Restaurant-Style Carrot Ginger Salad Dressing with it being salad season here.

Congratulations 🎉. It is over to you to pick a new ingredient, ideally one that is easily available worldwide, one that has not recently been chosen for a challenge, and if it excludes members through dietry restrictions or availability, an alternative needs to be available/proposed.

Wow.... my second win in 8 years!

Mushrooms haven't been used since 2021 of i looked correctly. Does that sound acceptable?
