The CookingBites recipe challenge: carrots

Carrot and Broccoli Cheddar Soup - There’s a lot going on in the name, but it was pretty easy to make. A lot of the same ingredients (from the same bunches of carrots and such) for my last recipe were used for this one.

How stupid can I be? I've been doing lots of carroty research in order to develop some recipes. I know carrots are good with orange and I have in mind a dish with seafood, orange and carrots. So I thought I'd cook the carrots in orange juice (clementine juice actually). Need I say more?

Oh. The seafood idea still stands. And carrots do go very will with oranges. But the point I was making was that if you try to cook carrots in acidic juice they don't cook! And I knew that yet still did it.

I've too many ideas because carrots are such a promiscuous vegetable. But hopefully at least 4 recipes from me.

I decided to Google carrots are such a promiscuous vegetable, and this came up:

I suppose what I meant by 'promiscuous' is that they go with so many things and can be cooked in so many ways and go with so many flavours. They don't discriminate.

Roast, boil, steam, microwave, sauté, grate, pickle, mash, juice, sous vide, add to salads, soups, stews, curries, goulash, tagine, stir fry, cakes, bread, muffins, ice cream, soufflé. Etc.
 
10 and a half days to go. We have 7 entries from five members so far. Very interesting!

Whats missing? Cakes, bread or sweet recipes, salads, dips or stews.

Carrots are versatile, economical and generally well liked. Lets get creative!

And yes, very simple as I just used baquette.
No mayonaise or margerine, but a bit of yoghurt mixed with chili paste
Ham, cucumber and carrot/daikon pickle
Fresh coriander leaf would have been great, but I didn't have any
 
Another entry: Carrot, beetroot and green bean salad, Moroccan style
This salad is delightful. The sweetness of the beetroot, the slightly crunchy carrots and green beans, and the gentle warmth of the spices. What's more, it's really easy to make, and could quite happily accompany all sorts of dishes, including a BBQ.
