The cookingbites recipe challenge: lamb or goat

I've never made or eaten rack of lamb.
Have you had the "lamb lollipop" chops that are made from butchering a rack of lamb into individual chops? That's how I use a rack of lamb. I have never cooked it whole as a rack, I prefer all of whatever delicious marinade I am using to get over as much surface as possible.

No I haven't. I feel the same way about the marinade. I usually marinade chops and then braise them till the meat falls off the bone.

The lamb "lollipops" are so tender that they just need to be seared on each side and served medium rare. I usually have DH sear them on the grill for 1 minute on each side. I will bring the marinade to 200F and then roll the chops in the marinade as they come off the grill for more flavor.

Recipe - Harissa-Lamb Skillet Lasagna

Much like yesterday’s quesadillas, this is a lamby spin on an old standard…stovetop skillet lasagna.

Yes, it looks a mess, but it’s quite good. The meat is very mild, and there’s a bit of depth from the harissa lurking in there.

You could probably try a goat-father.
Or a Lambchburg Lemonade.


Nah, for this challenge, forget the cocktails. It has to be a glass of…wait for it…you know it’s coming…you’ve been warned…

I'm thinking movie themes. The Goatfather and Silence of the Lambs.
We’d gone on vacation to Scotland once, driving up from England, and shortly after we’d crossed the border, we drove by a farm, and some kids (humans, not baby goats) were goofing around with some sheep.

As we were passing, one boy hopped on the back of a sheep and was trying to ride it, and I said something like, “Look at that idiot kid, what’s wrong with him?”

MrsT immediately replied, “He must be in some kind of trouble.”

“What?”

“Yeah, he’s on the lam(b)!”
