The cookingbites recipe challenge: lamb or goat

No...this is a challenge loaded with quality even though the quantity isn't massive. To me, this is what the recipe challenge is all about: it challenges us to step outside our comfort zone.
Quality is essential, evidently; even in the simplest dishes. I can still remember the best fish & chips I ever had, in Rye, Sussex. Good batter, perfectly fried fish, and crunchy chips.Nothing sophisiticated; just a classic dish, perfectly prepared. If I could have replicated that dish, I would have, and I'd also have posted it in a Cooking Bites challenge. Sometimes, the simplest dishes win, and sometimes not.
I think the challenge is just an opportunity for everyone on the site to offer what they cook well. Nothing more, so don't feel inhibited by complicated techniques or mile-long lists of ingredients - just go for it. There are no professional judges here!
 
Here’s my one and only entry: Vegan kofta

This was quick, easy to make, and pretty darn tasty!

I decided to take the rack of lamb for a little swim. I’m planning to cook this on the grill. I’ve all but given up on the grill, because I like the way steaks and chicken come out on a cast-iron pan. Cooking hotdogs on the grill is almost comical for how quickly they burn. Things cook more evenly, and have a nice char to them in a cast-iron pan.

But, it’s totally worth getting some flames near this beauty. I have a copper grill sheet, so there won’t be direct contact. But, there’s a massive difference between the flavor produced by a live flame and anything else.

For the record, I don’t think I need any more time. I’m honestly amazed that anybody submitted more than one recipe. This is a beautiful ingredient, but not one I’m able to cook with very often. msmofet: please take that into account. This would be like getting 30 recipes with something more universal, like onions. This is a massive turnout.

I absolutely love rack of lamb! I'm excited to see the results. And you're spot on about cast iron, it yields wonderful results with most meats. But that grill flavor is yummmmm.

How long do you need? I have no problem with extending.

Its whatever suits you. Maybe until Thursday 17th July next week? That would mean it was about a week's extension on the original deadline. We have often had that before.

Which reminds me that teamfat posted about entering a lamb rack recipe.

It's probably going to take her nearly that long to get over the discomfort of getting her tooth pulled. I hope it's sooner but that's never a fun ordeal.
