The cookingbites recipe challenge: lamb or goat

Publix and Winn Dixie both have square, 1 pound, prepackaged ground lamb, along with grass fed beef, pork, bison, turkey. The only place that has fresh ground lamb is the butcher/grocery store place. The ground lamb I recently bought was $9 a pound. I decided not to make the lamb tenderloin dish because $41 for 2 small pieces is kind of outrageous. I did think about cutting up a rack of lamb, butterflying and pounding, but that was $26 a pound and never went on sale. We're waiting for pasticcio to cool before cutting right now.

Have you thought of "grinding" it yourself?

Or the food processor, but that makes a very fine & sticky mince
I have ground meat in my food processor before several times. I used to love making filet mignon burgers. My problem is that lamb shanks and lamb shoulders have a large bone and lots of connective tissue and fat. Not sure where I can find a suitable cut of meat for that. And I really only need 1 lb of ground lamb.

Edited to add that using partially frozen chunks when grinding in the food processor prevents it from becoming a sticky paste.

Was at Aldi and Kroger today:

Aldi - they’re fairly well stocked with lamb…there were even some other things underneath what’s showing.

Kroger - that’s it. If you think that’s more behind it, no - that’s just a mirror to fool you.

Yup - there are some things from Aldi where the quality is pretty bad…canned beans, for example, but a lot of their stuff is equal to or better quality than Kroger.

Half-and-half, for example, is nearly a buck less for a quart. Doesn’t sound like much, but we go through a quart every five days, so it adds up.

Yes, I buy my dairy from Aldi, and I use a lot of half-and-half (coffee mostly) and heavy cream is a staple in my fridge, though I use it less often. I like their fresh produce. And they have a very nice cheese selection. I have had their ground lamb before and it's very nice. I had a bad experience (you might remember) with their lamb chops once so I am hesitant to buy those again, but they were on a tray and though vacuum sealed, the plastic seemed thin and it might have had a tiny hole in it somewhere, who knows. When I opened it, it was still a full week before it's "use by" date and it certainly was off. The packaging on the 1 lb lamb is much thicker and the lamb smelled nice when I bought it previously. Although the 30% off on the packages in your photos reminds me I need to be certain to check the "use by" dates if I find some today. Although since most stores have been out or have raised their prices on the lamb, it's probably new stock if they have it.
 
Struck out on lamb once again at the 3rd Aldi. Tomorrow I'm going to get a rear tail light fixed at my mechanic so I'll look again after, probably will suck it up and buy the expensive stuff from Giant Eagle at almost $10 lb.

Not bad. That's about what you'll find in your Sainsburys or Tesco in the UK. In Singapore maybe half to a third of that and at least twice the price.
