The cookingbites recipe challenge: lamb or goat

Well I did manage to get one final non-entry in. Picked up some "lamb" - a 4 bone rack, half of the usual 8 bone offerings.

And half a rack tipping the scales at 2 pounds?? That must have been one BIG lamb! I dare say we are getting into mutton territory here. Anyway I seasoned it, threw it on the grill.

Pulled it off at 122F. In the 10 minutes it rested, carry over heat took it to 143F !! A lot more than I was expecting. So the rack ended up burnt to a crisp, if you ask me. I like mine quite a bit more rare. Still, paired with some Syracuse Salt Potatoes it was a good meal. Just could have been better.

Maybe I will do better in the next challenge, we shall see.

Well it doesn't look burnt and the inside is lovely and pink. A bit of char can be a good thing...

Thank you everyone! Many wonderful entries here. I will do my best to have a winner as soon as possible.

(Didn't get much sleep due to pain. Have to get some sleep if possible and do some errands including food shopping.)

All these dishes look so good! Again, thank you everyone for all these diverse recipes.

I've narrowed it down somewhat. Which was very difficult. I have to look over the recipes a little more. I am going to try to make a decision soon.

I think you should go take a nap and not worry about it. It will all still be here tonight or tomorrow and I am certain no one is in a rush.
