Welcome to the CookingBites recipe challenge. The current challenge ingredient is leeks and Morning Glory is our judge. To enter, all you need to do is post a recipe which contains leeks, tag it cookingbites recipe challenge, and post a link to it in this thread. The winner becomes the judge for the next challenge. When 'floating' the idea for leeks as an ingredient, three members expressed an interest. I hope there will be more who will join in. Leeks are such a sweet, gentle vegetable and are very versatile. I won't necessarily be looking for them to be centre stage, although they most certainly can be. I'm more interested in flavour combinations.
 
Funny, I just recently came a crossed an unusual recipe which Leeks are the star.
I can't say that I've ever cooked with Leeks before.

Well, now could be the time. :)

Strange to me you never cooked leeks. They are so much a common ingredient to me.
 
I hope I get some time to be able to join this round.

A former flatmate of mine once imparted some leek-y wisdom to me; he said 'you can treat leeks exactly like onions'. Well of course they are their own thing, but as alliums he's kind of right, so anywhere you can make an onion the star, or any complementary combination of onion + whatever could be a target for subbing in a leek with who knows what results..
 
Here is an interesting leek fact. Indonesia is the top producer of leeks providing over a quarter of all leeks produced in the world.

In a comparison completed in 2019 of 58 countries, Indonesia ranked the highest in leek production with 590,596 tons. This accounted for 26.9% of leek production in the entire world. Turkey came in a very distant second place with approximately 225,000 tons. South Korea, Belgium, and France rounded out the top five.

Leeks are readily found in French cuisine, most commonly known as an ingredient in chilled Vichyssoise soup. In Turkey, leeks are sliced thickly, boiled, and stuffed with rice-based fillings. Cock-a-Leekie soup is popular in Scotland, while potato leek soup is popular in America.

First entry, and easy peasy: Leeks with cream cheese & bacon
This is a dish we invented at home to use up some leftovers and a bunch of leeks. It's rich, creamy and yummy.
You can serve it as a main, with potatoes or rice, or as a side for BBQ, roast meats, or whatever.
