Looks fantastic! What a good idea - meat marinade - never occurred to me but taking a look online apparently a lot of ways to use it like that
I don't do a lot of sourdough but my flatbread uses a little vinegar so the whey can go into that in place of, as the main liquidI used 750 in my big batch of sourdough
