Ingredients
2 pounds of tomatoes (the better the quality, the better the end result)
3/4 cups of brown sugar
2 tablespoons apple cider vinegar
1 heaping tablespoon of freshly mircoplaned/grated ginger (you can use dried ginger, but fresher is much better)
1/4 teaspoon cinnamon
1/8 teaspoon of ground cloves (you could use whole cloves during the process, just make sure to remember to pick them out and how many you used)
1 teaspoon salt (not table salt, never table salt)
If you want some heat, add 1/2 teaspoon of heat, like cayenne.
Method
Put everything in saucepan and bring to a boil and then reduce heat to a simmer. I simmered and reduced for about 45 minutes, stirring occasionally. You are going to end up with about 25% yield, that's how much you reduce this.
