Ingredients

  • 500 g, ground beef
  • 1 tsp baking soda
  • 2 tsp lemon juice
  • ¼ cup water
  • 1 small onion (pulp only)
  • ½ cup bread crumbs
  • 1 tsp salt
  • ½ tsp cumin
  • ½ smoked paprika
Instructions

  • In a small cup add the baking soda
  • Squeeze the lemon to a tsp and mix with the baking soda until it dissolves
  • Add ½ cup water and mix
  • Add the mixture into the ground beef
  • Knead for 5-10 minutes until incorporated and the ground beef is smooth
  • Add the salt, cumin and smoked paprika and mix while kneading it
  • Add the bread crumbs and continue kneading
  • Cover and let it rest overnight
  • Grate the onion and get rid of the juice, keep the pulp only
  • Mix the pulp of the onion with the ground beef and knead for 2-3 minutes
  • Make small meatballs in the shape of small discs and or cylinders
  • Grill on stovetop or preferably over charcoal fire for 1-2 minutes each side
  • Flip over to prevent burning while grilling
  • Serve with grilled chilies and tomatoes
