Turkish Liver Skewers - Ciger Shish Kebab


  • 500 g, calf’s liver (or lamb liver)
  • 150 g lamb fat (preferably rib fat)
  • 2 tsp cumin
  • 2 tsp chili flakes
  • 1 tsp sumak
  • 2 tsp paprika powder
  • Garnish:
  • ½ onion
  • 1 tomato (thinly sliced)
  • Chopped parsley (1/4 cup)
  • 1 tsp sumak
  • lavash, roti or pita bread to serve
  1. Remove the membrane / sinew of the liver
  2. Slice the liver and cut into small cubes and transfer to a bowl
  3. Slice the fat into similar sized cubes and add to the bowl
  4. Add cumin, chili flakes, sumak and paprika powder and give it a good mix
  5. Thread the liver and the fat on to the skewers
  6. Pre heat the oven to 200°C / 390°F (grilling mode)
  7. Thread 1 piece of fat for each 2 pieces of liver
  8. Chop the onion and parsley and mix & rub together with salt and sumak for the garnish
  9. Slice the tomato and set aside
  10. Grill the liver skewers in the oven for 20 minutes and turn occassionally to grill evenly
  11. Layer the garnish and the tomatoes on a lavash bread
  12. Remove the grilled livers and the fat from skewers and place onto the garnish
