Turkish Liver Skewers - Ciger Shish Kebab
Ingredients:
- 500 g, calf’s liver (or lamb liver)
- 150 g lamb fat (preferably rib fat)
- 2 tsp cumin
- 2 tsp chili flakes
- 1 tsp sumak
- 2 tsp paprika powder
- Garnish:
- ½ onion
- 1 tomato (thinly sliced)
- Chopped parsley (1/4 cup)
- 1 tsp sumak
- lavash, roti or pita bread to serve
- Remove the membrane / sinew of the liver
- Slice the liver and cut into small cubes and transfer to a bowl
- Slice the fat into similar sized cubes and add to the bowl
- Add cumin, chili flakes, sumak and paprika powder and give it a good mix
- Thread the liver and the fat on to the skewers
- Pre heat the oven to 200°C / 390°F (grilling mode)
- Thread 1 piece of fat for each 2 pieces of liver
- Chop the onion and parsley and mix & rub together with salt and sumak for the garnish
- Slice the tomato and set aside
- Grill the liver skewers in the oven for 20 minutes and turn occassionally to grill evenly
- Layer the garnish and the tomatoes on a lavash bread
- Remove the grilled livers and the fat from skewers and place onto the garnish
