Turmeric Seasoned Salmon Croquettes

I had some leftover salmon that I had frozen last week and decided to make croquettes with it. You could use canned salmon as well. The croquettes were moist and flavorful. I was really pleased with the results!

Servings: Makes 4 salmon croquettes, approximately 5 ounces each
Preparation time: Approximately 20 minutes

Ingredients:
1 pound cooked samon (or canned)
1/4 cup bread crumbs
2-3 tbsp mayonnaise
1 tbsp minced onion or shallot
2 tbsp minced red bell pepper
1 tbsp finely chopped parsley
1/4 tsp turmeric
dash of cayenne pepper
dash of salt and pepper
1 tbsp lemon juice
2 tbsp of bread crumbs for dusting formed croquettes
2 tbsp butter
1 tbsp olive oil

Mix all ingredients in a bowl.

Form croquettes to desired size and shape. Dust exterior with bread crumbs.

Pan fry on medium-high heat in butter/olive oil mixture, taking care to use a spatula when transferring croquettes to the pan to avoid breaking.

Carefully flip, browning croquettes on both sides. Store in warm oven until ready to serve (don't wait too long or they will dry out).

Notes: Taste the mixture to adjust salt and pepper levels before forming the patties. The saltiness of the salmon can vary depending on how the salmon was prepared or if one uses canned salmon instead.
