Using coffee in food recipes

I use coffee in cooking - usually espresso as it's stronger in coffee flavour than ordinary coffee, and most often in sweet dishes but also savoury.

I used it in the Besan Gelato recipe I posted for the chickpea recipe challenge.

I hadn't heard of red eye gravy before - will check it out as sounds interesting!
 
When I got into smoking meats some years ago, a neighbor told me to get Traeger's Coffee Rub, as it was his favorite rub. Lol, to date, that is the only rub I've bought that I don't like. I ended up giving it to him. I do love my black coffee, but just prefer it in a mug instead of on my plate.
