Chicken here is very expensive so I don't eat it as often as I would like it. Chicken is my favorite. I usually roll the chicken breasts in a combination of spices and bake it in the oven. I always make extra so I can cut it up and put it on my salad the next day.

Wow, I am surprised chicken is expensive in Canada LB...it is dirt cheap here, our cheapest meat. Of course there are tons of chicken farms in the US. I saw a 10 pound bag of chicken legs last week for 4.90...but natually that was just after Thanksgiving, when everyone probably had tons of turkey leftovers.
Answering my own question:
Its because chicken production is strictly government regulated unlike pork and beef.
