Recipe Vanilla Bean "Pig Candy"

My family loves "Pig Candy". I added vanilla beans for a twist. Wonderful.

Ingredients:

1 lb. thick cut, apple wood smoke cured bacon
1/2 cup dark brown sugar
*1/4 cup crushed pecans
Seeds from 1 vanilla bean

Method:

Heat oven to 350 degrees F
Line a rimmed sheet pan with foil (ease of cleaning)
Use a rack in the pan
Crumple a sheet of foil
Uncrumple foil leaving peaks and valleys - for draining
Cut Bacon strips in thirds - or quarters
Slice vanilla bean lengthwise
Scrape out the seeds
**Reserve the pod
Combine sugar, pecans and vanilla seeds
Roll pieces of bacon in mixture
Place on rack
Cook 15 minutes
Turn bacon
Cook another 15 minutes - until bacon is crisp
Transfer to The crumpled foil to drain
Cool to room temperature - devour or freeze - or make lots so you can do both

*Walnuts can be used. I prefer pecans - more natural oil and a nice woody flavor
**Fill a pint jar with white sugar. Insert the reserved vanilla pod = vanilla sugar

Note: I never make 1 batch - my family devours this stuff.
