Home Made Kahlua

Ingredients


4 cups brewed coffee
2 cups dark brown sugar
2 cups light brown sugar
750 milliliters Vodka or Everclear
6 tbsp. pure vanilla extract

Method

*Brew 4 cups of your favorite coffee
Bring to a boil in a stock pot
Reduce heat to simmer
Remove pot from heat
Stir in sugar
**Stir constantly until the sugar is completely dissolved and the mixture stops bubbling.
Return to heat
Simmer for 3 hours stirring every 15 minutes
Cool to room temperature
Add vanilla and liquor
Stir well
Transfer to jars, bottles or other containers that are well sealed
Store in a dark, cool place - Pantry
Turn your containers three or four times a week for 6 weeks.

Uses

Sip
Add to a cup of coffee
Use in recipes

*Many recipes call for instant coffee. I found it very bitter.
**DO NOT turn your back for even 1 second - the syrup will boil over

NOTES: I think I need to change my forum name to Kitchen Drama Queen. I remember making Kahlua when I first met my Honey. Unfortunately he was out of town and busy with clients when I decided to start this process. A very simple recipe - I managed 2 epic fails.

Batch #1 - I turned my back on the coffee, sugar mixture long enough to put the measuring cup in the sink. The syrup boiled over. 45 minutes cleaning up the sticky, burnt sugar mess. Had to pull the range out to clean the sides.
Batch #2 - used instant coffee. Very bitter.
Batch #3 - perfection. I hope. I really won't know for 6 weeks.

I would try Espresso freshly grinded coffee beans, no instant nothing

The instant coffee was a disaster - very bitter. My third attempt was with fresh brewed coffee. Very good. If you use Espresso you may need to cut it with water - probably 1/3 to 1/2.

Give it a try. It is nice to have around and makes a wonderful gift.
 
Definitely shall do ..

I do not have a regular café machine, only an Espresso Maker ..

However, my parents have a good coffee maker so we shall do this as a family adventure !!!!

Sounds good .. 6 Weeks to age ..
