One of our favorites eastern dishes is the Padthai.
I thought I would share the recipe
Put the rice noddles in a bowl of water an hour before cooking.
Heat the oil in the wok, add the onion and fry for 2 minutes.
Add the tofu cubes and continue to fry till the tofu changes its color to golden-yellow.
Add the eggs and stir till the eggs look like scrambled eggs...
Add the noddles (without the water) to the wok.
Pour the sauce and stir for a minute.
Add the 1/2 cup of water and let it boil.
Just before the noddles are ready, add the vegetables (carrot, sprouts, green onion ).
Stir till the carrot is ready.

- 100g rice noodles
- 100g bean sprouts
- 2 eggs
- 1/2 onion (red one is better) - sliced.
- 1/2 cup water
- green onion stalks - cut to 2" pieces
- 1 carrot - cut like matches
- 4 tbsp oil
- 2 tbsp black soi sauce
- 2 tbsp soy sauce
- 2 tbsp mushroom sauce
- 2 tbsp tamarind paste
- 2 tbsp sugar
