Recipe & Video Vietnamese Street Food Type Pizza with Crispy Fried Whitebait and Coconut

I made this today using ingredients already in my flat, as have had to stay put at home a few days. Was so happy with the result.



Recipe for 1 Pizza

1 22cm rice paper wrapping
125gms frozen whitebait (defrosted)
3/4 cup coconut flakes
1/2 red onion finely chopped
1 tbsp Asian style chilli paste
1 free range egg
2 tbsp corn flour
1/2 tsp cayenne pepper
1 tsp salt
Siracha Sauce
Coconut oil for shallow frying
Vegetable oil for deep frying


Combine flour, chilli powder, and salt in a bag. Add whitebait and coat. Deep fry whitebait in small clumps to golden and drain and set aside. Place rice paper wrapping in a frypan lubricated with coconut oil and coat top surface with the oil as well and begin to fry on a medium heat. Place onion and paste on the centre of the wrapper, then add the raw egg and using back of spoon carefully mix egg, onion, and paste gradually smoothing over entire wrapper. Once completely coated, sprinkle coconut flakes evenly over pizza, then add fried pieces of whitebait. Add stripes of mayo and chilli sauce over the top to taste, and let fry another minute or two until base is coloured and crispy. Either fold pizza in half like a quesillada to serve, or leave open and use scissors to slice in to pieces.
