Probably the collegen that cooks out when you cook a meat, or carcass, and then it congeals in the fridge when it cools down. It was mandatory in my GM's house to eat a lump with Thanksgiving dinner.
It was a disaster, I used my new wok and all the dough went to the bottom. I quickly scooped the whole thing and microwaved. My husband said it’s tasty, but not like store bought.
My daughter’s version is a bit better, still not crispy enough, but she liked it enough. Everyone’s plate was emptied.
The bottom line is we are giving up on making this dish at home.

I think, I bought a bag already mixed, a bag of turmeric was enclosed too. I didn’t see that at first. But the recipe on the back of the bag has egg to mix in, not sure that is correct either.Do you mean rice flour to nake the dough?
Yes maybe that’s the problem, some recipes call for wheat flower, and some recipes call for an egg. I got totally confused.Rice flour doesn't have any gluten so I'd think you need an egg to hold it together?
