Weekly menu (2026)

Ok, the 4 lamb shanks are in the crockpot, used the leftover red wine Stags Leap to deglaze it, should be good.
The old carrots have been shredded and I threw away half. It’s going to my compost.
Resting a bit before I do mashed potatoes.
I did manage to harvest some watercress and mesclum salad from my garden. I think I skip the beet roots today, however I will be making mushroom gravy with my oyster mushrooms.

Everything is done, my husband is busy playing with burning some CDs for music. He’s not hungry yet.
I have to zap a little bit in the microwave because he likes it hot.
Here is my mushroom gravy, I was hesitant in adding more soy sauce( like Jacques Pepin) because of the salt, this gravy was mild in the beginning, I added a bit of Worcestershire sauce.

That looks very mushroom. :thumbsup: Not a gravy in my book but a lovely 'mushroom in sauce' dish that would be great with pasta or mashed potatoes. Nothing else needed!
 
Here is the final product, I could have cut the lettuce into smaller bites, but this is 12-inch plate.
The meat is very tender, my husband did have good eye on the good steaks, I used only one pan for grilling the steaks and then use the same pan to do the mushroom sauce or mashed potatoes, what I mean to say I could have cooked the steaks to be more seared.
For my husband it was slightly pink inside and mine is more rare.

Btw, I used this recipe for the mushroom gravy, something that i already have in my pantry, butter, a bit of olive oil, some shallots, not garlic, and no chicken broth, just plain old water.

I’m now making pork chili for my husband in a crockpot, I added not only kidney beans but also pinto beans. These 2 cans were 88c each and my husband was complaining that we might not consume them, haha.
Rest a bit then I will do the pork chili verde, bigger chunks then the pork chili.
 
Chicken is on the grill, these 4 pieces have bones so they will take longer.
I also going to throw my bitter melon on the side of my bapchae, I need to eat this vegetable, but I don't want to get another pot for soup
 
My husband had his pork chili tonight with mashed potatoes on top and a bit of cheddar cheese, he said it’s really good, a bit spicy.
So now I have mashed potatoes and peas, I’m going to some samosas, and with the long eggplant in a curry dish, we already have a dish for Tuesday. Maybe pan grill some large shrimp to go with it.
Wednesday - I’m going to roast squash, carrots and with ricotta cheese, I’m making some kind of vegetable lasagna that i saw on my instagram.
Thursday - squash, pork, white beans soup
Friday - shakshuka with sardines and eggs
Saturday- pizza, especially if I’m going to my mom’s house
 
My husband caught my daughter’s flulike symptoms, he even had flu shot too.
So the menu is now changed, ramen noodles for lunch using trotter’s broth, he can have pork chili for dinner.
My daughter can have Pork Chili Verde for dinner.
 
Samosas are done, I put a bit of egg wash to help seal the skin, they are flat, in a funny shape but they will taste good, will be served with ketchup.
Right now, I’m waiting to bake the eggplant slices with coated olive oil, I’m not frying them, not enough oil left anyway.
 
Not great food but it’s edible.
I think the samosas turned out better than I expected with the no frying, I wanted flat so the skin would be crispy.

The eggplant dish, not as great, I didn’t have half of the spices, only had fennel and cumin.
I also didn’t know long eggplants don’t break down like regular eggplants. Almost a vegetarian dish except for 2 prawns.
