What are you baking today (2025)?

For Bingo this evening:

I got 14 regular sized Pumpkin Cupcakes, frosted with Maple Cream Cheese and sprinkled with Heath Toffee Bits.
I put two aside for DH, because ya know little whiny 10 year old boys ...

I cut into one of his that I gave him after lunch, and just had to taste it myself... AH YUM!
So I set aside another cupcake for Moi.
DH said, "I don't know why you don't just make this kind for just us?"
HMMMMM 🤔 I think I need to!

Have you posted these muffin and frosting recipes? DD loves pumpkin and the maple frosting sounds wonderful.
 
Applesauce Spice Cupcakes

Added finely chopped Granny Smith Apple and some Pecans

The crumb was lovely.
I had some leftover Maple Cream Cheese Frosting leftover, meh, too overpowering.
Both DH & I tried the cupcakes naked and frosted, plain was better.
I had run out of ground Cinnamon and improvised with this
 
I kinda messed up... I had wanted to freeze some of the cupcakes, un-frosted, oops!
I did them all ...
DH: that's okay, we can eat those. Give some away.

*gasp*
WHAT DID HE JUST SAY?
Two are going next door for Mister's birthday, two will go to my Mother's tomorrow and that will leave us with 5... we've both already had 2 each!

Both DH & I want to change our answers: these lovelies are so much better served cold, straight out of the `fridge and into your mouth!
I still think that I'd look for a different icing for the cupcakes.
