Oh I think the method had a lot to do with it, too.

Someone once told me, in the age of no videos to reference, that they thought I was overworking my dough. I could never get it to stay put after stretching. I could not make a decent loaf of French bread. Let alone pizza dough. Flour was for making gravy or a roux as far as I was concerned.
I think seeing someone else work the dough, fold it, pinch it, stretch it a little and fold it back on four sides, helped me immensely. Far more than getting the flour to water ratio correct.

We all started somewhere :)

I followed this recipe with the exception that I used warm water. And I had to add more water. Probably because I measured and didn't weigh.

For me it is blacked out, also. But it works like a link and will take you to youtube if you click on, "Watch on youtube".
It says the owner only wants it watched on YT. Probably gets more money that way.

Let me know if you can't click on it and I'll try to link it another way.
