Quesiabirria or Queso Birria from our local food truck

This was my first time trying Birria.
The owner of the cart really not truck, greets me warmly on every visit.
He asked what I'd like today and I told him that I had never had Birria... "Oooooh, you must try! No charge today."
Well isn't that kind of him.
I also ordered 3 flour tortilla Asada Street Tacos for DH.
Carlos said, "you'll never order Asada again once you try Birria, and you pronounced it correctly as well, thank you."
And let me tell you buddy!
That's no looker, but MAN! Carlos was right! Birria for me next time.
 
It's where you change kidney to kidley, I do it as well, in fact our whole house does. Sydney becomes sydley

It emanated from the old joke about the guy who had a speech disorder....

Well he's got a badass kitchen, but he didn't use enough bacon or mayonnaise to suit my tastes! And I would have chosen a different kind of lettuce most likely (green or red leaf lettuce--grass, LOL).
