I invited over to the house my one Neighborhood Gal Pal who still works and is SOOO very busy all the time, that I never get to see her ... the last time I saw her was at Thanksgiving, only because both of our Mom's live in the same Senior Community and went to the Buffet Lunch there together...

It was great to be able to spend one-on-one time with her!
DH even jumped in to the conversation-he missed her too...
She's Keto so I made a tray of friendly pupus for us to nibble on

(there's two different cheeses in the ham & turkey deli sliced meat, stuck with olives-she loves olives! The Mini Sweet Bell Peppers are stuffed with Garlic & Chive flavored whipped Cream Cheese-yum!)
As DF left she said, "thank you for dinner"

I also found some kinda-sorta keto friendly wine that she appreciated.

I made a big stew (potjie) over wood fire
Onions, garlic, beef, tomatoes, red wine, soy, tomato paste and spices.
I got left overs. Gotta see if I can remember what I did and write it down
That sounds delicious! We’re in the midst of a 5-day rain, so that would really hit the spot.
 
Kind of..... I assembled the sandwich and used my creme brulee torch to mold the cheese over top, because there was no way to take residual heat to melt the cheese on these sandwichs, so I had to improvise.
I make mine using a small white round cup that's the size of an English muffin. I spray the inside of the cup with oil, put the egg and a few drops of cream in, scramble, and microwave for about 30 seconds until the eggs are about half cooked, then add a slice of cheese on top. I microwave for another 30 seconds (every microwave is different so some might only need 15-20 seconds for each increment) and the cheese is melted. Scoop the egg out of the cup onto the toasted muffin and voila! This pic is from 2021. That muffin is close to being in a SatNavSaysStraightOn's no-no territory of being overtoasted (not quite burnt though).
