What did you cook or eat today (April 2026)?

Made 4 chicken salads with focaccia so far.
No chicken salad, but my focaccia is rising out there in the sunshine!
4 kgs mango chutney.
Omelette, fried potatoes and chistorra for my kid's breakfast.
Then a severe look at what was in the kitchen:
Loads of odd nuts hanging around - peanuts, cashew nuts, hazelnuts, sesame-covered peanuts, a few raisins. All dumped in a bowl with a packet of ramen noodle veg spices. Ready for tonight (yes, we've got more visitors coming)
2 tins tuna, mixed with a handful of olives (from the fridge), capers, and some confit tomatoes cooked in the oven with olive oil, bit of sugar, basil, garlic, salt and pepper. That'll probably go into the focaccia as a filling, but I might just use basil, pesto and bocconcini (again, hanging around in the fridge).
Pasta coming up for my lunch.

Fish Friday: Pan-fried Sea Bass with Sherry Lentils & Smoked Bacon, with Burnt Lemon

Missed DH’s plate of sushi, but you know what that looks like.

Biscuits and gravy with eggs for my 3:30pm breakfast. I cheated by using frozen biscuits because I'm feeling lazy today. I accidentally overcooked my eggs to medium but they were still good.

I bought these from Walmart a few weeks ago. I just don't always feel like making biscuits from scratch and last few times I ended up throwing some out after they sat around for a few days, and I hate wasting food. These were a big 44 oz. package for less than $5. They were quite nice. I dislike the canned refrigerated biscuits.

Same in the USA: wonderful fish to be had; grouper, mackerel, hake, swordfish, marlin, flounder, barracuda, amberjack (one of my absolute favourites!) and yet, it's salmon on the menu.
Unless you're in Florida or Louisiana, more likely to find grouper or flounder (especially stuffed flounder). I used to fish for amberjack and my main complaint is the size of the worms I pulled out when cleaning and fileting. Barracuda are bloody fish and mackerel are very oily IMO.
