Barriehie the fresh Hatch Chiles came out not long ago and I roast them myself on the gasser.
Up here in the mountains of Cowboyville Arizona, they don't have the roasting basket as they do in Southern AZ, so ...
I made the mistake of grabbing "medium" chiles :pepper:too for DH & I!!!
If you have a rotisserie set up, they make small after market roasting baskets. I got one for Craig years ago.
 
Simple meal tonight. B/S chicken thighs marinated on Balsamic/honey dressing. Baby Yukon Gold potatoes steamed then quickly fried in bacon grease, with a sour cream drizzle. Steamed green beans. No pic.

Cochinita pibil has been in the sous vide since early afternoon. Hope it turns out really well. Tomorrow will tell.

New Zealand Green Lip Mussels Rigatoni aglio e oilo (my plate has Steamed Shrimp).
It took me years to convince DH that not all of Italian foods are serving with a red sauce... now this is his all time favorite.
This evening, he actually added jarred Anchovy Fillets to his plate.
