A friend from work sent me some samosa chaat today, absolutely lovely.
LOVE Saltgrass!!!But to answer your question, we ate smoked brisket and smoked turkey at my cousin's house and I cooked a bit at my brother's house (steak and lobster with prosciutto wrapped asparagus and deconstructed sushi bowls with salmon another night) and takeout pizza and wings. At my daughter's house in Austin we had smoked turkey and fixings for Thanksgiving. At my sister's we went to a steakhouse called Saltgrass that was very good.
We go home tomorrow to the bitter cold!
You've inspired me! Beautiful! Been an age since I made one and everyone loves them! Hard to come by kidneys this way but one supermarket sells lamb they cut up themselves and sometimes they have kidneys.Thanks MG
I’d had some tesco suet (thats the only one without wheat) but not enough so I put some lard in the iciest part of the fridge and grated it into some flour (Caputo GF flour) then sieved it to remove the excess flour to make my own suet.
So it was a mix of two types.
The homemade suet did make exceptional dumplings last time so I’m undecided on what suet to use in the future until I’ve tucked into the pudding below and given it a proper taste test.
Eventually I found the second bag of tesco suet (knew it was somewhere) and made the next one with only that.
I made it in a glass casserole dish and won’t be turning this one out so peeps can help themselves to a chunk from the fridge as a when.

The colour difference was quite striking I used a darkish chicken stock for the liquid in the first one and milk in the second because I’m wanting to see which one I prefer.
It was 25 years ago I last made this before the internet was really a thing so I had a look and the advice to completely cook the filling and reduce the steam time to two hours seemed sensible.
It’s much better, much easier to control the final flavour of the filling. It benefited from being in the fridge overnight and stopped it from feeling like a marathon cook session![]()
It was surprisingly hard to get the lambs kidneys here too but the butcher said he’d put them by for me (which he did) and that very day Morrisons delivered two packs so I have a bit of a stash of them nowAgadashi
