What did you cook or eat today? (December 2025)

One of my Neighborhood Gal Pals is really in the weeds with caring for elderly Mother and her own life. (her mom is friends with my mom and they live in the same Senior Living Community)
I asked her the other day, " have I ever given you any of my King Ranch Chicken Casserole before?"
She said that she didn't think so ...
EH VOILA !!!!
The larger aluminum foil wrapped container is for her and the two Pyrex bowls will go to my Mother's freezer.

Butterflied, onion & mushroom stuffed chicken thighs with glazed carrots tonight.

The star anise with the carrots made them next level! The 2nd part of the chicken cook took 20 minutes to be done, though (20 + 20), instead of 10, like the recipe. I think next time, I'll do 20 minutes at 375, glaze, and then crank the heat to 450 to crisp the skin, which should then be done in 10-15 minutes.

Hard boiled egg (from yesterday - I always cook extra) served with 2 pieces of sourdough covered with pistashio butter (the LH one was sweet which surprised me, I had not see the sugar on the ingredients but it grew on me and I guess it is not that different to having jam and peanut butter (which I have not yet tried))
 
Think I'll just pass on the salmon and stick with the fish I know are great tasting :)
What fish do you like?

I did not have fish for dinner.
I used the last of my peanut sauce yesterday for a veg dish.
Chinese cabbage, red & yellow bell pepper, onion. With the peanut sauce and a little creamed coconut.
Actualy, that was brunch.
Dinner was the same but with chicken added. Ad the left over steamed rice became egg fried rice.

Tonight will be steak (rump steak)

What fish do I like, that depends on where I am. Here I like either Cod or Hadock beer battered and deep fried or I can go grilled with either.

Back in Australia, well that's a different matter as there are many that I like and that is available:

King George Whiting
Rainbow Trout
Barrumundi
Flake
Snapper

They are the main ones and all but the Flake grilled. The flake (or shark) I prefer beer battered and deep fried although it can be grilled really nicely as well.

That being said - I'll take a real 1" thick well done Rump Steak any day of the week :)

Seriously, I don't know if this place has rump steak, I mean they call T Bones - Porterhouse so if they do, who knows what they call it but I've never found it anywhere :(

Back home the only steak I'd eat was T Bones or Rump and more often than not Rump - that's when I got tired of Lamb Chops :)
