Triple butterflied, smoked pork tenderloin stuffed with cream cheese, roasted red peppers, crispy crumbled bacon, basil pesto, and spinach, seasoned with salt, pepper, and smoky paprika, and served with my favorite French mother sauce, homemade espagnole. 👍

Ingredients are in the OP. The refried beans down the middle separate the salsas and eggs; thus, divorce.
When I looked it up, it came up with a different explanation.

"Huevos Divorciados (or "divorced eggs") is a traditional Mexican breakfast dish consisting of two fried eggs (typically sunny-side up) served on tortillas, with one egg covered in red salsa (salsa roja) and the other in green salsa (salsa verde). "

Most, if not all, Mexican dishes have regional variations, as well as family to family.

I had a mixture of everything....
A little left over chicken tikka masala, mushrooms*, extra tomato, coriander and spices.
It worked surprisingly well, but cannot be reproduced :)

* The mushrooms were one of those surprises from the freezer. I only realised once they were semi defrosted. A combo of oyster mushrooms, dried ones and wood's ear.
Then a friend rocked up close to dinner time and he is not fond of mushrooms, so I wasn't going to waste them on him. They (the mushrooms) went into the fridge (still half frozen) for later use
