What did you cook or eat today (February 2026)?

As its National Toast Day:

Ingredients are in the OP. The refried beans down the middle separate the salsas and eggs; thus, divorce.
When I looked it up, it came up with a different explanation.

Most, if not all, Mexican dishes have regional variations, as well as family to family.
 
I had a mixture of everything....
A little left over chicken tikka masala, mushrooms*, extra tomato, coriander and spices.
It worked surprisingly well, but cannot be reproduced :)

* The mushrooms were one of those surprises from the freezer. I only realised once they were semi defrosted. A combo of oyster mushrooms, dried ones and wood's ear.
Then a friend rocked up close to dinner time and he is not fond of mushrooms, so I wasn't going to waste them on him. They (the mushrooms) went into the fridge (still half frozen) for later use
 
I've been told we're keeping the Mushroom and walnut recipe.

Mushroom and walnut samosas with half-roasted/half-baked purple potatoes, roasted cauliflower, roasted red pepper and roasted aubergine. Pretty much a bung it all in a tray or two in the oven and cook.
