What did you cook or eat today (February 2026)?

It's on my list, it's just a bigger project, it's not a "quick dish" necessarily, and I need to plan for it. Plus, I have to source the ingredients.
If you have a decent Mex or Latin grocery like Barriehie's they should have the bits. The corn comes dried or frozen and is pretty inexpensive. Very tasty 🙂

I usually use the hominy in a can. Finding good tripe can be a trick...

I can get the dried peppers from Amazon. As cringy as that sounds, there are good brands that put their products on there (if you look hard enough), and Amazon is the middleman.
 
This is the original plate. BBQ chicken wings with honey BBQ sauce, had to use one honey jar. And the other wing with sesame seeds is with gochujang Korean hot sauce. My family like the honey BBQ sauce better. My daughter and hubby like the guacamole sauce, which is done by using a smasher and not a mortar and pestle. Sour cream and onion dip on the bottom of the dish.
We will have our carrot cake for dessert, a bigger piece than last night.
