Huevos divorciados (divorce eggs). Refried beans down the middle, salsa verde (green) on 1 side, salsa roja (red) on the other. Cilantro and cotija cheese as garnish. Typically served as breakfast, but was our dinner. Tortillas as bread.

I fried up two, 1/2 of one for Mom and the rest for our breakfast tomorrow, sliced it into bite-sized pieces for her tiny pie hole, fried up some mushrooms to go on top, brown gravy in a condiment container, some buttered Peas and Mash (sshhhh, it's instant-she'll never know).
I'm know that this is not a "traditional" Bangers & Mash, but she loves it and I need to get her to eat and eat protein!
