The whole thing about "huevos divorciados" is that they are separated.
Rancheros are really just "placed"into the sauce to cook.

I don’t know about gas, but the self-cleaning cycle on an electric oven gets well over 800F, so they can get up there in pizza oven range, no problem.

It’s not been unheard of for serious pizza heads to break the locking mechanism on their home ovens and using the self-cleaning cycle to bake pizzas.
I've thought about that for my oven. Two small screws and it's done... 🤔

I ate them at Fisher's, in Mexico City. To be honest, I doubt there are many different ingredients; salsa roja (red sauce); salsa verde (green sauce); eggs and probably refried beans somewhere in the equation. Typical Mexican ingredients, but my guess is that every person prepares them in their own way.

Seriously tho, how hot can you (safely) heat your oven to? Bearing in mind that it has a thermostat. Don't recall whether you've mentioned if it's gas or electric.

As for hydration and other ingredient combinations, I've tried quite a few and come to the conclusion that I either need a pizza oven or go back to going at it from the other direction, that of bread making in a domestic oven. Which actually worked ok tbh before I started trying to tweak everything, and which I've gone back to.

Well right now I'm experimenting with 00 batches and that flour is super silky but reacts to radiant heat the least. Adding some bread flour will help with browning and chew (and a touch of sugar) but that changes things also. I can get my oven up to 550 convection and with using the stone and help from my broiler I'm getting close, but not to my personal satisfaction.

That seems like it could be dangerous.

There is usually only 1 kind of salsa, either red or green depending on preference, tortillas are usually sliced or torn and either fried or cooked in salsa, since huevos rancheros is considered breakfast and tortillas are leftover from day before, and often guacamole or fresh avocado, plus some crema is added. The dish was probably first made to use up what was leftover from the day before so is very customizable.
