I don’t know about gas, but the self-cleaning cycle on an electric oven gets well over 800F, so they can get up there in pizza oven range, no problem.

It’s not been unheard of for serious pizza heads to break the locking mechanism on their home ovens and using the self-cleaning cycle to bake pizzas.

I've thought about that for my oven. Two small screws and it's done...

I ate them at Fisher's, in Mexico City. To be honest, I doubt there are many different ingredients; salsa roja (red sauce); salsa verde (green sauce); eggs and probably refried beans somewhere in the equation. Typical Mexican ingredients, but my guess is that every person prepares them in their own way.

On my oven, it’s three hours, but a good portion of that is warming up, then cooling back down to a safe temp before the lock releases.
