What did you cook or eat today? (January 2026)

I've never cooked hominy from scratch until today. It definitely has more flavor than canned, costs x3, and takes longer to prepare but it's a worthwhile endeavor. 👍

I had to laugh about those. I’ve been stressing teaching her a few easy things, and she had diced carrots for soup a few days ago. When it was time to start cooking tonight, I said, “Ok, trim and peel the carrots, then slice them about a quarter-inch thick.”

“I already know how to do that. You can do it.”

The rest of the stuff on there…some leftover mashed potatoes, and a meatloaf sandwich (along with a little bit of meatloaf on the side).

You know how everyone says you always have to make arancini with leftover risotto? Well, there’s a similar rule with meatloaf - it’s almost obligatory that you have a meatloaf sandwich the next day. Meatloaf sandwiches are so popular here that they’re on any classic diner’s menu.

Garden salad with papaya seeds dressing, very good, I like the sweetness of this dressing, I had most of this

I also ordered the clam chowder, not as good as the one I had at my mom’s area, this chowder is a bit runny, not enough clams

This one is shrimp quesadilla, didn’t come up to my expectations, the ones I made at home was with cheese and jalapeños, this one was made with refried beans. Not as tasty.

I've never seen hominy that looks like that. It looks like the Latin corn sold in the freezer section here. The hominy I've seen and eaten looks like popcorn, though taste and texture are quite different.
