What did you cook or eat today? (January 2026)

I just finished making a jar and a bit of sambal

I was dubious that the thin silicone lid I bought would stop much of the water loss and thought it would probably evaporate and cut out during the 12 hour overnight cook but no, it’s as full as when I left it last night!
So soon hopefully I’ll have some nice fat slices of pork belly to fry 😋
Mine works very well too. The 20+ hour cook I did a while ago didn't need any water added.

I know it as djeroek poeroet, also known as Makrut, and in English it's a kaffir lime.
I was goinng to use the peel, but it was more bitter than I remembered.
Only used the (very little bit of) juice
Most people just use the leaves, especially in Thai recipes.
