Chicken enchiladas

I tried triple cooked chips the other day and they were a bit of a faff/hassle to prepare but they were the crunchiest, lightest and fluffiest chips I've ever had!

As they've been cooked properly in a deep fryer they are a little darker than oven/air fried chips but don't let that fool you, they were light and crispy and not hard (like over cooked oven chips can sometimes be) they were scruptious!

This is how I cooked them: Triple Cooked Chips (Fries)
 
Ramen noodles with king oyster mushrooms and leftover everything in the soup. This way when I go to Hawaii I won’t have to pay an arm and a leg for a bowl ramen noodles.

For dessert, I had this Dragon fruit, when I first encountered this fruit was at Harrods department store, I remember it was £32 for a pound, after that If I can get the fruit cheaper elsewhere, I buy and eat them.
